箱塘联动养殖模式下太湖鲂鲌的肌肉营养与品质
Study on muscle nutrition and quality of Culter alburnus ♀×Megalobrama terminalis ♂ cultured in net cages

Abstract
The polyculture model is a farming model designed to maintain ecological balance based on mutualistic symbiosis among cultured species and multi-level utilization of nutrients.In this experiment,net cages were set up in the crab culture pond to raise Culter alburnus♀×Megalobrama terminalis ♂ with appropriate density.The physical indicators,nutritional composition and muscle texture of cage-cultured C.alburnus×M.terminalis were evaluated,and the pond-cultured C.alburnus×M.terminalis were served as the control.The results show that:(1)The liver-body ratio and viscera-body ratio of cage-cultured individuals were significantly lower than those in the control group(P<0.05),indicating that the meat yield and edible rate were obvious higher in cage-cultured individuals.(2)The content of crude fat and ash were significantly lower in the muscle of cage-cultured individuals,but moisture content was significantly higher in this group(P<0.05).(3)The levels of texture-related indices were all significantly higher in cage-cultured individuals,with the most obvious advances in hardness(43.58%),stickiness(39.14%),chewiness(79.49%)and adhesiveness(67.31%)when compared to the control.In summary,this polyculture model makes full use of the space of the breeding water body,is a useful exploration to improve the nutritional quality of the culture objects and improve the efficiency of pond culture,and is worthy of reference by the majority of farmers.关键词
