Abstract
Oxidative stress is a vital factor involved in the occurrence and development of a variety of human diseases and human aging.Antioxidant peptides can inhibit and delay lipid peroxidation and remove excess free radicals in the body,which can effectively protect the body from free radicals.Therefore,when free radicals are in excess and cannot be removed in time,the intake of appropriate antioxidant peptides can prevent the occurrence of oxidative stress and reduce the incidence of diseases.Eggshell membrane,as a potential resource of proteins and bioactive peptides,has considerable application value.In this paper,eggshell membrane,a high value-added biofilm,was summarized,and its antioxidant peptide function was introduced,with emphasis on the mechanism of antioxidant peptide.The aim is to provide theoretical basis for the development and utilization of eggshell membrane resources.关键词
