榆林羊杂碎标准化生产现状与前景分析
Current Situation and Prospect Analysis of Standardized Production of Yulin Mutton Offal
摘要
Abstract
Yulin mutton offal is one of the typical representatives of Yulin's traditional cuisine,and it is also the only specialty food with standardized construction.This paper expounds on the challenges in its standardization construction and the important leading and exemplary role after the successful standardization transformation from four aspects:the development status of mutton offal industry in Yulin,the problems in standardized production,the prospect analysis of standardized production,and the specific strategies of standardization development.It can promote the standardized development of other Yulin's specialty food processing industries,such as Yulin tofu,Yulin pinsanxian stew,Jiaxian handmade hanging noodles and Zizhou stuffing.关键词
