滁州鲫生物学特性及营养成分分析
Biological Characteristics and Nutritional Analysis of Chuzhou Crucian Carp

Abstract
Chuzhou crucian carp is a national geographical indication product,and its germplasm resources urgently need to be developed. This study analyzed the biological characteristics and nutritional components of Chuzhou crucian carp in the Xijianhu Reservoir and the conservation pond of Chuzhou Academy of Agricultural Sciences. The results showed that the DNA content of Chuzhou crucian carp was 1.64,belonging to triploid. The chromosome set consisted of 159 chromosomes,and the karyotype formula was 3n=30m+24sm+45st+60t,and the number of chromosome arms was 213.The genetic differences between populations of Xijianhu Reservoir and the conservation pond of Chuzhou Academy of Agricultural Sciences were not significant,and the total number of differential SNP sites between Chuzhou crucian carp and Carassius auratus gibelio was 1257574,most of the genes where SNP located were enriched in pathways related to growth and development;17 common amino acids were detected in both hydrolyzed and free amino acids in Chuzhou crucian carp muscle. Among the hydrolyzed amino acids,the percentage of essential amino acids to total amino acids (EAA/TAA) and the percentage of delicious amino acids to total amino acids (DAA/TAA) were 41.74%±5.31%and 33.17%±2.92%,respectively. Chuzhou crucian carp muscle contained 16 types of fatty acids,including 7 saturated fatty acids,3 monounsaturated fatty acids and 6 polyunsaturated fatty acids.关键词
