Against the backdrop of increasing awareness of sustainable development and environmental protection,the traditional chemical synthesis pathways cannot meet the requirements of the times,and the biological fermentation,as an environmentally friendly method for pyruvate production,has received widespread attention.Pyruvate is a key chemical intermediate that plays an important role in the chemical,food,and pharmaceutical industries.This article mainly explores the strategies and methods of optimization and sustainable development of pyruvate fermentation process under microbial metabolic pathways,and aims to achieve the efficient,low-cost,and environmentally friendly synthesis of pyruvate.
