Abstract
This article uses seed melon as the main experimental material and employs an ultrasonic-assisted extraction method to extract polysaccharides from the seed melon.By conducting single-factor experiments on temperature,time,solid-liquid ratio,and power,the optimal process parameters for the maximum extraction rate of seed melon polysaccharides are determined.The detection of the modified process parameters revealed that the maximum extraction rate of seed melon polysaccharides was 6.32%.Using vitamin C(Vc)as a control,the antioxidant activity of seed melon polysaccharides was analyzed.The results showed that when the concentration of seed melon polysaccharides reached 0.08 mg/mL,their scavenging ability for DPPH radicals and hydroxyl radicals was half that of Vc,indicating that seed melon polysaccharides possess certain antioxidant activity.关键词
