牛磺酸(2-氨基乙磺酸)是一种含硫的非蛋白质氨基酸,在体内以游离的方式广泛存在.牛磺酸是维持鱼类正常生理功能的营养性添加剂,在水产动物生长发育、代谢、渗透调节、消化、生理、免疫调节与抗氧化性能等方面发挥重要作用.添加牛磺酸能够改善低鱼粉饲料对水产动物生产性能、健康和水产品造成的负面影响.文章介绍了牛磺酸特性及其合成与代谢途径,综述了牛磺酸在低鱼粉饲料中的推荐用量及低鱼粉饲料中添加牛磺酸对水产动物生长、健康的影响,为牛磺酸在水产动物低鱼粉饲料中的合理利用提供参考.

Taurine(2-aminoethanesulfonic acid)is a sulfur-containing non-protein amino acid that is widely present in the body in a free state.Taurine is a nutritional additive that maintains the normal physiological functions of fish and plays an important role in the growth and development,metabolism,osmoregulation,digestive physiology,immune enhancement,and antioxidant properties of aquatic animals.The addition of taurine can improve the negative effects of low-fishmeal feed on the production performance,health,and quality of aquatic products.The article introduces the characteristics of taurine and its synthesis and metabolic pathways,reviews the recommended dosage of taurine in low-fishmeal feed,and summarizes the impact of taurine addition in low-fishmeal feed on the growth and health of aquatic animals,providing a reference for the rational use of taurine in low-fishmeal feed for aquatic animals.
