Research and Application of Origin Traceability Technology in Poultry and Poultry Products
摘要
Abstract
At present,poultry products with regional specialty meet consumers'demand for diversified poultry products.However,the phenomenon of shoddy,fake and others are common in market,which makes it urgent for the protection and utilization of regional characteristic poultry resources and poultry products.Most of the traditional sensory evaluation methods are descriptive index,and the accuracy is not very good.In recent years,modern analytical techniques such as stable isotope,mineral elements fingerprint analysis,visible/near-infrared spectroscopy have shown great application potential in ensuring the authenticity and discriminability of the identity of poultry and its products.This article summarized the technology of stable isotope,mineral elements fingerprint analysis,visible/near-infrared spectroscopy and so on.Then it also summarized the research and application of these technologies in poultry and its products origin traceability,in order to provide support for the origin traceability system establishment and improvement of poultry and poultry products.关键词
