Abstract

The muscle nutritional components of two artificially bred populations of Chelydra serpentina were measured and analyzed.The results showed that the crude protein content of fresh muscle samples from the two popula-tions was 17.43%and 18.57%,respectively;the crude fat content was 0.67%and 0.73%,respectively;the moisture content was 79.80%and 79.23%,respectively;the crude ash content was 1.13%and 1.10%,respectively;the total sugar content was 0.37%and 0.30%,respectively.There were no significant differences in muscle routine nutritional components between the two populations(P>0.05).In the two populations of Chelydra serpentina,16 amino acids were detected,including 7 essential amino acids,2 semi-essential amino acids,and 7 non-essential amino acids.The total content of essential amino acids in the two populations was 6.93%and 7.50%,the total content of non-essential amino acids was 8.11%and 8.74%,and the total content of flavor amino acids was 6.22%and 6.70%.Among all the amino acids,glutamic acid was the most abundant.According to the standard amino acid score of FAO/WHO,methionine+cystine was the first limiting amino acids(combination),followed by valine.The essential amino acid index of the two popula-tions of Chelydra serpentina was 0.85 and 0.87.The fatty acid composition was dominated by polyunsaturated fatty acid C18:2n6c,with a content of 84.63 mg/100 g and 105.30 mg/100 g in the two populations;except for stearic acid(P<0.05),the fatty acid content of the two populations showed no significant differences(P>0.05).In summary,the muscle of Chelydra serpentina has nutritional characteristics of high protein content,low fat content,and abundant flavor amino acids,making it a high-quality source of food protein.
