摘要
Abstract
Milk is rich in milk fat,which is an important source of human intake of fatty acids.Studies have shown that the occurrence of cardiovascular diseases and cancers in humans is highly correlated with the composition of fatty acid consumed.While milk contains high saturated fatty acid and ω-6/ω-3 polyunsaturated fatty acid (PUFA)ratio,the fatty acid composition is not optimal,which is the controversy of dairy consumption.With the improvement of people's awareness of health,consumers pay more attention to the balanced nutrition of fatty acids.Based on this,this paper summarized the relevant achievements in the development of ω-3 PUFA enriched dairy products in the aspects of nutrition,genetics,genetic engineering and production and processing technology from the perspective of the whole industry chain,aiming to provide reference for subsequent research.关键词
