Abstract
The fermentation process and extraction technology of high-strength curdian were optimized.The results showed that the best carbon source and nitrogen source of the fermentation process were sucrose and(NH4)2HPO4,respectively.When the yield of curdian reached the maximum value of 55 g/L,the optimal fermentation conditions were sucrose concentration of 50 g/L,(NH4)2HPO4 concentration of 2 g/L and fermentation temperature of 30 ℃.Through the purification and extraction process of various schemes,the optimum drying temperature of the curdian product was 40-45℃and the drying method was vacuum drying.The process can realize the industrial production of the curdian,and the wide recognition of the product performance.关键词
