3D打印技术是一种新兴的制造技术,其可以利用数字模型实现精准制造.近年来,3D打印技术已经被广泛应用于各个领域,包括食品、生物医药等.3D食品打印的优势在于能够制作复杂的食品模型、设计独特的图案以及精准定制.3D食品打印技术由挤出式打印、黏结剂喷射和喷墨打印组成,其利用食品材料,基于逐层堆积的方式设计造型.本文重点介绍了 3D打印技术在食品中的最新研究进展,深入总结了 3D打印技术在不同类型食品应用中的特点和局限性.同时,通过介绍食品的精准营养递送、贮藏保鲜、食品加工、生物制造等方面,详细分析了 3D打印在食品行业的应用现状.最后展望了未来食品3D打印技术的发展,以期为3D打印与食品产业的深度融合提供理论指导.
3D printing technology is an emerging manufacturing technology which can utilize digital models to achieve precise manufacturing.In recent years,3D printing technology has been widely used in various fields,including food,biomedicine,etc.The advantages of 3D food printing include the ability to create complex food models,design unique patterns,and customize with precision.3D food printing technology consists of extrusion printing,binder jetting,and inkjet printing,which utilizes food materials to design shapes based on layer-by-layer stacking.This paper focused on the latest research progress of 3D printing technology in food products,summarizing in depth the characteristics and limitations of 3D printing technology in different types of food applications.Meanwhile,the current status of 3D printing application in the food industry was analyzed in detail by introducing the precise nutritional delivery,storage and preservation,food processing,and bio-manufacturing of food.Finally,it looked forward to the future development of food 3D printing technology,in order to provide theoretical guidance for the deep integration of 3D printing and food industry.
