为探究CO2麻醉作为一种友好致死方式对草鱼生理应激及肌肉品质的影响,本研究设置CO2麻醉浓度、麻醉时间和温度3个麻醉因素处理草鱼,测定血清生化指标、僵直指数、白度和持水力等品质指标,并以传统击晕方法为对照,进一步探究CO2麻醉致死对草鱼贮藏期间鱼肉品质的影响.结果表明:1)不同的麻醉因素对草鱼的应激水平和肉质有不同的影响,根据测定结果和实际工厂的生产需求,CO2浓度为(650±50)mg/L,麻醉时间70 min,水温4 ℃时,草鱼的应激水平较低,鱼肉品质较好.2)在贮藏期间,与击晕组比较,CO2处理明显延迟草鱼僵硬期的开始和消退,并进一步延缓IMP的分解和Hx的形成,更好地保证了鱼肉的新鲜度.综上,在合适的参数下,CO2处理对草鱼是一种有效且友好的致死方式,与传统击晕相比,可以减少应激反应,提升鱼肉品质.本研究可为CO2技术在水产加工业的应用提供新的理论支持和研究思路,对开发一种能够提升淡水鱼品质、保护鱼福利且能应用于加工生产的宰杀技术具有重要意义.

This study aimed to explore the effect of CO2 anesthesia as a humane slaughtering method on the physiological stress and meat quality of grass carp.Three anesthetic factors including CO2 anesthesia concentration,anesthesia time,and anesthesia temperature were set to treat grass carp,and serum biochemical indexes,rigor index,whiteness,and water holding capacity were measured.Additionally,the effects of CO2 treatment on the quality of grass carp muscle during storage was explored,taking traditional stunning methods as a control.The results showed that:1)Different factors had varying impact on the stress level and meat quality of grass carp.According to the measurement results and actual production needs of the factory,the optimal settings were determined to be a CO2 concentration of(650±50)mg/L,anesthesia time of 70 minutes,and water temperature of 4 ℃.These settings resulted in reduced stress levels for the grass carp and improved fish meat quality.2)During storage,compared with the stunning group,CO2 treatment significantly delayed in rigor onset and resolution,and further delayed the decomposition of IMP and the formation of Hx,better ensuring the freshness of the fish meat.In summary,under appropriate parameters,CO2 treatment is an effective and humane method of slaughtering grass carp,which can reduce stress response and improve the quality of fish meat compared to traditional stunning methods.This study provides new theoretical support and research ideas for the application of CO2 technology in the aquatic processing industry,with significant implications for the development of slaughter technology to enhance the quality of freshwater fish,protect fish welfare,and advance processing and production practices.
