中华绒螯蟹2龄早熟和晚熟品系第5代成蟹营养品质比较研究
Comparative study on nutritional quality of the second-year early-maturing and late-maturing strains of adult Chinese mitten crab Eriocheir sinensis after five generations of selective breeding

Abstract
This research was aimed to compare the edible yield,proximate composition,coloration,and total carotenoid content of early-maturing(EM)and late-maturing(LM)strains of adult Eriocheir sinensis after five generations of selective breeding,and the individuals without selection were served as the control.The results showed that:(1)The average body weights of crabs in the EM and LM groups were significantly higher than the control group(P<0.05).The highest value of gonadosomatic index(GSI)and hepatosomatic index(HSI)was observed in the EM and LM groups,respectively,but no significant difference was observed between the groups(P>0.05).(2)In terms of proximate composition,crude fat content in the gonads of female crabs of the EM group was significantly higher than that of the LM group(P<0.05),and the crude fat and ash contents in the hepatopancreas of both male and female crabs of the EM strain was also significantly higher than the LM group(P<0.05).(3)No significant difference was observed in L∗,a∗,and b∗ values and total carotenoid content of hepatopancreas and carapace,and the only significant difference was observed in L∗ values of the female gonads that the control group was significantly lower than the EM and LM strains(P<0.05).The results indicated that selective breeding based on gonad development speed and growth performance had little effect on the nutritional quality of E.sinensis.关键词
