摘要

Abstract

The storage stability of β-carotene microcapsules produced with different wall materials and their color parameters were investigated.The β-carotene microcapsules were produced by vacuum freeze-drying method using maltodextrin,gelatin,gum arabic and cassava cross-linked modified starch as composite wall materials,and the encapsulation rate,color intensity and storage stability of the microcapsules were evaluated.The results showed that the highest microcapsule embedding rate of 52.69%was achieved when the mass ratio of the composite wall material of maltodextrin,gelatin and cassava cross-linked modified starch was 1∶0.15∶0.25,and the core-wall mass ratio was 1∶15.The highest retention rate of microcapsules with a core-wall mass ratio of 1∶15 in the storage environments of 4 ℃,24 ℃,and 45 ℃ protected from light for 8 days,respectively,and the final retention rate was 94.07%(±2.03%)in the light environment for 6 d,which indicated that the microcapsules had good storage stability.The color difference analysis showed that the stability of light and temperature was closely related to the retention rate of β-carotene microcapsules.The higher the embedding rate,the stronger the resistance to light and temperature,and the smaller the change of color difference.Under the scanning electron microscope,it was observed that the β-carotene microcapsules showed an irregular flake shape with dense surfaces and rounded edges.The application of β-carotene microencapsulated solid powders is expanded,providing relevant data for cosmetics that require natural pigment color powders.
