摘要

Abstract

Muscle texture characterization is an important index to evaluate the quality of aquatic products,which is of great significance to aquaculture.The texture meter can objectively and rapidly determine the muscle texture character-istics of aquatic products,which is more and more widely used in the field of aquaculture research,and the quality difference of different aquatic products can be compared by the texture meter.This paper briefly outlines the structure and principle of the mass spectrometer,the mass spectrometry parameters for assessing the quality of aquatic products,and describes in detail the effects of different species,different feeds,different culture modes,different growth stages and different regions on the mass spectrometry characteristics of aquatic products.Finally,we summarize the differences in muscle quality of aquatic products analyzed by texture parameters,as well as the correlation between texture parame-ters and other indicators,and looks forward to the trend and development of the mass spectrometry applications.[Chi-nese Fishery Quality and Standards,2024,14(5):46-52]
