贵南黑裘皮羊和泽库羊屠宰性能及肉品质研究
Study on Slaughter Performance and Meat Quality of Guinan Black Fur Sheep and Zeku Sheep

Abstract
Guinan Black fur sheep and Zeku sheep are unique Tibetan sheep breeds in the Qinghai-Tibet Plateau.In or-der to better understand and utilize the two local sheep breeds,this study randomly selected 20 healthy 12-month-old Guinan Black fur sheep and Zeku sheep(half male and half female)under natural grazing conditions,and explored the differences in growth performance,slaughter performance,meat quality,and muscle nutrition levels between the two breeds through slaughter experiments.The results showed that contents of protein,inosinate,C18:1,C18:3n3 and C20:0 in longissimus dorsi and body length of Guinan Black fur sheep were significantly higher than Zeku sheep(P<0.05);cannon circumference,meat color(a*),the contents of C21:0 in longissimus dorsi and body height were significantly lower than Zeku sheep(P<0.05).Contents of dry matter,crude fat,Ca,Cu,Fe,Mg,Met,Lys,C16:1,C17:0,C17:1,C18:0,C20:2,C20:3,C24:1 in longissimus dorsi and chest width,hip width,spleen index,cooked meat rate of Guinan Black fur sheep were significantly higher than Zeku sheep(P<0.01).Contents of inosinate,K,His,C12:0,C14:0,C15:1,C16:0,C18:2,C20:4,carcass weight,slaughter rate,pH,and total saturated fatty acids(SFA)and unsaturated fatty acids(USFA)of longissimus dorsi in Guinan Black fur sheep were significantly lower than Zeku sheep(P<0.01).In conclu-sion,the slaughter performance of Zeku sheep was found to be superior to that of Guinan Black fur sheep,with higher levels of fatty acids in the muscle resulting in a more delectable taste.Conversely,the muscle tissue of Guinan Black fur sheep exhibited higher contents of protein,crude fat,trace elements,and amino acids compared to Zeku sheep,indi-cating greater nutritional value.关键词
