Abstract
The nutritional constituents of Macrobrachium nipponense in Charsen Reservoir were analyzed and evalua-ted.The results showed that the contents of water,crude protein,crude fat,ash and total sugar were 79.13%,16.47%,1.02%,1.25%and 0.25%,respectively.A total of 18 amino acids were detected in Macrobrachium nipponense,including 8 essential amino acids(EAA)and 10 non-essential amino acids(NEAA).The content of TAA was 76.99%,EAA 28.92%and NEAA 48.07%.EAA/TAA was 37.56%,EAA/NEAA was 60.16%,EAA/TAA was close to but EAA/NEAA exceeded the FAO/WHO recommended standard.According to the amino acid score(AAS)and chemical score(CS),the first limiting amino acid is threonine(Thr),while the second limiting amino acid is valine(Val)for amino acid score and phenylalanine+tyrosine(Phe+Tyr)for chemical score.17 kinds of fatty acids were detected in muscle fat of Macrobrachium nipponense in Charsen Reservoir,inclu-ding 5 kinds of saturated fatty acids(SFA),the content of which was 20.44%.3 kinds of monounsaturated fatty acids(MUFA),the content of 33.80%;9 kinds of polyunsaturated fatty acids(PUFA),the content of 26.35%;EPA content was 11.83%and DHA content was 5.81%.The results show that the Macrobrachium nipponense from Qasen reservoir is a kind of Macrobrachium nipponense with high nutritional value,especially the content of EPA and DHA,and regular eating is beneficial to human health.关键词
