Abstract

The experiment aimed to study the meat quality and nutritional components of Nanchong black goats of different genders.A total of 10 male and 10 female Nanchong black goats of 12 months old and under the same breeding conditions were selected to measure indicators such as slaughter rate,cooked meat rate,crude protein content,and crude fat content.The results showed that the male goat group had significantly or extremely higher body weight,slaughter rate,net meat rate,carcass net meat rate,hide area,and shear force than the female goat group(P<0.05 or P<0.01),while the female goat group had a significantly higher cooked meat rate than the male goat group(P<0.05).The crude protein content in the muscles of both male and female goats ranged from 20.94%to 21.78%,the total amino acid content ranged from 18.32%to 19.88%,the umami amino acid content ranged from 8.08%to 8.71%,and the essential amino acids accounted for about 40.00%of the total amino acids.The crude protein and amino acid contents were not significantly related to gender(P>0.05).The crude fat content in the female goat group was extremely higher than in the male goat group(P<0.01),and there were significant or extremely differences in the content of nine fatty acids(C16∶1n7,C18∶0,C18∶1n9c,C18∶2n6c,C20∶1,C16∶0,C18∶3n3,C20∶3n6,and C20∶4n6)between genders(P<0.05 or P<0.01).The content of monounsaturated fatty acids in the male goat group was extremely lower than in the female goat group(P<0.01),and the content of polyunsaturated fatty acids was extremely higher than in the female goat group(P<0.01).The study indicates that Nanchong black goats of different genders have their own advantages in terms of slaughter performance,meat quality,and nutritional components.Male goats have higher body weight and slaughter performance than female goats,while female goats have higher fat content than male goats.The crude protein,amino acid content,and the proportion of saturated fatty acids are not related to gender.
