环保酵素酸菜发酵剂对酸菜发酵品质影响的研究
Study on the Effect of Garbage Enzyme Starter on Sauerkraut Fermentation Quality

Abstract
Taking the sauerkraut fermented with the garbage enzyme starter as the research object,the acid-producing capacity was assessed through the measurement of changes in pH,total acidity,and bacterial cell density of the fermentation broth.Nitrite levels in sauerkraut were analyzed to investigate the fermentation process,while the sensory indexe evaluation system was employed to evaluate the quality of sauerkraut.The results showed that the acid-producing capacity of the garbage enzyme starter was significantly higher than that of commercially available directed vat sets.At the end of fermentation,the nitrite level in sauerkraut was far below the national standard of 20 mg/kg,and met national food safety and hygiene standards.J30 and J50 enzymatic sauerkraut had the light yellow colour,crisp texture,sour smell and rich flavour.关键词
