A Meta-analysis of Bacillus cereus Prevalence in Chinese Foods

Abstract

Bacillus cereus(B.cereus)is a facultative anaerobic and rod-shaped Gram-positive bacterium,which is widely distributed in nature and strongly adapted to the environment.In this article,the literature related to B.cereus prevalence in Chinese foods published from 2014 to 2023 was systematically selected and meta-analyzed according to the inclusion and exclusion citeria for literature from the Web of Science and the China National Knowledge Infrastructure.After screening,a total of 26 research papers were included in this study,covering 18 499 samples from 13 provincial areas(provinces,autonomous regions,and municipalities)in China from 2014 to 2023.Sequencing studies of some strains revealed that the overall detection rate of diarrhoeal toxin genes was higher than that of vomiting toxin genes.The results of the meta-analysis of B.cereus positive rates showed that among the seven well-defined food categories,the positive rate in milk and dairy products was the highest(25.50%,95%CI:18.61%-33.89%),followed by the positive rates in raw materials(17.64%,95%CI:2.46%-64.48%),soybean products(16.43%,95%CI:12.56%-21.21%),restaurant and mixed foods(14.67%,95%CI:9.05%-22.90%),grain and cereal products(14.26%,95%CI:9.29%-21.28%),and foods for infants and children(12.10%,95%CI:8.72%-16.54%),while meat and meat products(7.48%,95%CI:1.92%-24.99%)had a lower positive rate,and the overall combined positive rate of foods was 14.92%(95%CI:12.24%-18.08%).In conclusion,the meta-analysis method can clarify the association characteristics of different food categories,food sampling stages,sampling locations and B.cereus prevalence,which can provide a reference for risk assessment and management of B.cereus prevalence in Chinese food.
