Abstract

In order to explore the optimal process parameters for ultrasonic assisted enzymatic hydrolysis in extracting Ganoderma lucidum peptides,promote the extraction of G.lucidum peptides and the industrial production of corresponding products,the extraction of G.lucidum peptides and the preparation process of G.lucidum peptide granules were studied with the peptide extraction amount as the reference index.Firstly,a single factor experiment was conducted,and then an orthogonal experimental design was used to optimize the process conditions for extracting G.lucidum peptides by combining ultrasonic and enzymatic methods,and further explore the formula of G.lucidum peptide granules.The results showed that through optimization,we determined the optimal extraction process parameters for G.lucidum peptides:a solid-liquid ratio of 1∶50,a reaction time of 2 hours,a reaction temperature of 60 ℃,and an enzyme dosage of 6 000 U·g-1.In addition,we have also determined the optimal ratio for the formula of G.lucidum peptide granules,with dextrin accounting for 20%,starch accounting for 25%,citric acid accounting for 0.3%,and sucrose accounting for 6%.
