青岛紫彩血蛤软体部营养成分分析及评价
Analysis and evaluation of nutritional composition in the edible part of Nuttallia olivacea in Qingdao

Abstract
To analyze the nutritional composition and quality of the soft body of Nuttallia olivacea in Qingdao,the basic nutritional components of its soft body were tested using chemical and instrumental analysis methods,and a nutritional quality evaluation was conducted.The results showed that in the dry sample of the soft body,the con-tents of crude protein,crude fat,total sugar,and ash were 54.76%,2.60%,5.89%,and 14.00%,respectively.A total of 18 amino acids were detected,with a total content of 403.6 mg/g(dry weight).Among these,the total content of eight essential amino acids(EAA)accounted for 35.63%of the total amino acid content,closely approaching the proportion of high-quality protein in the FAO/WHO standard model.The limiting amino acids in the soft body of the N.olivacea were mainly cysteine+methionine and tryptophan.The edible part contained 27 fatty acids,with the total content of monounsaturated and polyunsaturated fatty acids accounting for 53.71%,and the content of DHA and EPA accounting for 22.86%of the total fatty acids.It was also rich in water-soluble vitamins B3(510 mg/kg)and B2(9.90 mg/kg),and rich in calcium,iron,zinc,selenium,and other inorganic elements.The heavy metal content of N.olivacea met environmental quality assessment standards,and no residues of hexachlorocyclohexane(HCH)or Dichloro-Diphenyl-Trichloroethane(DDT)were detected,indicating high food safety.In conclusion,N.olivacea is a kind of aquatic product with high protein,low fat,balanced,and rich amino acid content,possessing high development and utilization value as well as promising market prospects.关键词
