摘要

Abstract

Capsaicinoids are one of unique active substances in chili peppers,synthesized and accumulated exclusively in chili plants.They are a class of colorless lipophilic crystalline substances that are extremely insoluble in water at room temperature but readily soluble in organic solvents.Capsaicinoids possess a variety of biological functions,including antibacterial,anti-inflammatory,antioxidant,maintenance of rumen homeostasis,enhancement of immunity,and improvement of animal health.They are widely used in ruminant production to improve the production performance of ruminants.Capsaicinoids are free of side effects and are healthy and environmentally friendly,making them a novel high-quality natural feed additive,which have a broad development prospect.This article reviews the biological functions of capsaicinoids and their application in ruminant breeding,providing a reference for the further development and utilization of capsaicinoids in ruminant production.
