Research Progress on the Molecular Regulatory Mechanisms of Genes Associated with the Synthesis of Polyunsaturated Fatty Acids in Duck Meat

Abstract
The content of polyunsaturated fatty acids(PUFAs)in poultry meat serves as a vital indicator of its nutritional value.Elevating the levels of polyunsaturated fatty acids in poultry meat holds significant importance in enhancing meat quality,promoting human health,and ensuring the food security in China.The synthesis of PUFAs in poultry meat primarily involves two steps:desaturation and elongation of carbon chains.Key genes,mainly belonging to the FADS family and ELOVL family,play essential roles in this process.The roles of the FADS and ELOVL families exhibit certain differences in the PUFAs synthesis pathway between poultry and mammalian meat.The expression levels of these genes are influenced and regulated at both the transcriptional and post-transcriptional levels by SNP variations,multiple transcription factors,and miRNA.However,the molecular mechanisms underlying the regulation of PUFAs synthesis-related genes in poultry meat have not been clearly elucidated.This review summarizes the synthesis pathway of polyunsaturated fatty acids and the roles of key genes,further exploring the molecular regulatory mechanisms that impact the expression of relevant functional genes.By comparing with related research in mammals,the research gaps in the field of molecular regulatory mechanisms of PUFAs synthesis-related genes in poultry meat are identified,providing insights and directions for further studies.This review also serves as a scientific basis and important reference for breeding poultry,particularly in the case of duck meat,with increased levels of polyunsaturated fatty acids.关键词
