Advancements in Research on the Effects of Gastrointestinal Microorganisms on Intramuscular Fat Deposition in Ruminants
摘要
Abstract
The intramuscular fat content of ruminants is influenced by many factors,such as genetics,diet composition,feeding management,and gastrointestinal microorganisms.It is closely related to meat color,flavor,tenderness,and juiciness,making it an important economic trait.Emerging studies have demonstrated that families such as Enterobacteriaceae,Ruminococcaceae,and Spirillaceae,along with their functional metabolites—such as volatile fatty acids and bile acids—produced in the gastrointestinal tract,are significantly related to lipid metabolism and intramuscular fat deposition.This paper mainly reviews the principles of intramuscular fat deposition in ruminants,the mechanisms by which gastrointestinal microorganisms affect intramuscular fat deposition,and methods for controlling intramuscular fat deposition,in order to provide references for studying the interaction between intramuscular fat deposition and gastrointestinal microorganisms in ruminants,as well as the production of high-quality beef and mutton.关键词
