摘要

Abstract

[Objective]This paper aimed to promote the degradation of β-carotene by carotenoid cleavage di-oxygenases(CCDs)to produce tobacco flavouring cleavage products.[Method]An oil-in-water Pickering emulsion based on the stabilizing effect of solid nanoparticles was constructed in this study.The effects of commercially available mesoporous silica nanoparticles and prepared hollow mesoporous silica nanoparticles on the physicochem-ical properties and microstructures of the β-carotene-loaded Pickering emulsion were investigated at the same con-centration.In order to achieve the contact between carotenoid cracking dioxygenase and β-carotene substrate,Pick-ering emulsion environment was used as a high performance interface catalytic platform to promote the enzymatic reaction,to compare the aroma composition and relative content ratio of substrate after enzymatic hydrolysis reaction in different environments.[Result](1)The internal surface area of HMSNs with hollow structure was 396.361 m2·g-1,the pore capacity was 0.296 cc·g-1,and the average pore size was 5.880 nm,which was 1.9,3.1 and 1.4 times of that of MSNs,respectively.(2)The average particle size of HMSNs/MSNs Pickering emulsion was 30 μm/45 μm,respectively.The former emulsion had smaller drop size,higher residual emulsion volume fraction and more stable emulsion system,which could effectively improve the catalytic activity of carotenoid cracking dioxygenase.(3)In HMSNs Pickering emulsion environment,CCDs cleaved β-carotene to produce 80 tobacco aroma compounds,36 chemical components were increased compared with MSNs emulsion.[Conclusion]This study provides a theoreti-cal basis for the cleavage of β-carotene by carotenoid cleavage dioxygenase in the water-oil interface environment,as well as for the preparation of β-carotene degradation products with improved application effects in cigarettes.
