摘要
Abstract
[Objective]To study the in vitro antioxidant activity of fenugreek pectin.[Method]Ascorbic acid(VC)was used as a positive con-trol,and 1,1-diphenyl-2-trinitrophenylhydrazine(DPPH)free radical scavenging experiment was used to evaluate the antioxidant activity of fenugreek pectin obtained by the water extraction and alcohol precipitation of fenugreek.[Result]The IC50 of fenugreek pectin and ascorbic acid scavenging DPPH free radical were 0.340 and 0.016 mg/mL,respectively.[Conclusion]Fenugreek pectin has antioxidant activity.The antioxidant activity of fenugreek pectin is slightly less than that of ascorbic acid at the same concentration.关键词
