摘要

Abstract

To study the distribution characteristics of the purine in soybeans from different varieties and producing areas,57 soybean samples from 8 major soybean producing areas in China were taken as the research object,and the composition and content of purine in soybeans were determined by ultrahigh-performance liquid chromatography(UPLC)and compared,so as to further explore the correlation between purine content in soybeans and geographical and meteorological factors.The results showed that the total purine contents in soybeans were 1 184.0 to 2 116.8 mg·kg-1,which were between the middle and high purine groups in food,with the middle group being the main group(96.5%).Adenine and guanine were the predominant purine,both accounting for more than 95.6%of the total purine content.The coefficient of variation of adenine(13.8%)and guanine(12.3%)among the samples were relatively low,indicating high genetic stability.The analysis results of different varieties showed that the contents of total purine,adenine and guanine in soybean cultivars were lower than those in landraces,but there was no statistical significance.The spatial distribution showed that low purine soybeans were mainly concentrated in Southern and Huang-Huai-Hai area.Correlation analysis showed that total purine(R=0.51),adenine(R=0.51)and guanine(R=0.51)were positively correlated with latitude(R=0.51,P<0.01),negatively correlated with accumulated annual precipitation(R=-0.37 to-0.36,P<0.01)and positively correlated with accumulated annual sunshine hours(R=0.43 to 0.48,P<0.01).This study provides data support for the breeding,planting,processing and consumption of high-quality low-purine soybeans in China.
