Abstract

Phytosterols are a type of natural compounds,also known as plant sterols,existing mainly in the forms of free sterols,sterol glycosides,and steryl esters.Phytosterols are widely utilized as a feed additive and possess numerous significant physiological functions,such as antioxidation,anti-inflammation,and immune regulation.Cholesterol is a crucial additive in the aquaculture industry.The content of cholesterol in plant-based raw materials is lower than that in animal-based raw materials.Under the major trend of fishmeal substitution,with the increase in the proportion of plant-based raw materials in feed,many aquatic animals have exhibited slow growth due to a deficiency of cholesterol.Nevertheless,cholesterol is costly,and researchers in the aquaculture industry have been constantly seeking appropriate substitutes.Phytosterols have a similar chemical structure to cholesterol and thus represent a suitable alternative.In this paper,the physicochemical properties,physiological functions,metabolic mechanism of phytosterols and their research progress in aquatic animals were summarized,aiming to provide reference for the application of phytosterols in aquatic animals production and the study of substituting cholesterol.
