摘要

Abstract

Aflatoxin B1(AFB1)is an extremely toxic mycotoxin produced by Aspergillus fungi and is widely present in grains and feed crops.Due to its high thermal stability and certain photostability,AFB1 is difficult to completely eliminate under conventional food processing and storage conditions,posing a major food safety hazard and severely threatening the livestock industry and public health.Consequently,the toxicokinetics and toxic mechanisms of AFB1 have been key research areas in food safety,with continuous new discoveries deepening the scientific understanding of this toxin.This paper reviews the major exposure pathways,in vivo bioactivation,and detoxification processes of AFB1,with a focus on the complex interactions between different cytochrome P450(CYP450)and AFB1 metabolites.Additionally,the latest research progress on AFB1-induced hepatotoxicity,nephrotoxicity,intestinal toxicity,and immunotoxicity is summarized.These insights provide a theoretical and scientific basis for the development of AFB1 detoxification strategies and the formulation of food safety standards.
