Abstract

The storage effect of high voltage electrostatic field combined with modified atmosphere packaging(MAP)on hairtail under ice-temperature conditions is studied.Hairtail meat are stored in a non-electric field refrigerator(a control group),or in a high voltage electrostatic field refrigerator(16 kV/m)after put into a mass fraction of 60%CO2+7%O2+33%N2 MAP(treated group)for 15 days at ice-temperature(0℃).The pH,drip loss rate,color,texture,total volatile basic nitrogen(TVB-N)content,total bacterial count and other indicators are measured during storage.The results showed that compared with the control group,the pH of the treated group is more stable,the drip loss rate of the treated group is significantly higher on day 3,and the yellow-blue values are significantly lower on day 9.The adhesiveness and TVB-N contents of the treated group were significantly lower than those of the control from day 9 and frome 6 of storage,respectively,and they are only 9.42%and 19.43%of control group on day 15.Therefore,the method of using high-voltage electrostatic field combined with MAP can effectively delay the spoilage,maintain the quality of hairtail.
