摘要

Abstract

[Objective]Epigallocatechin gallate(EGCG)is the main component of green tea polyphe-nols,known for its strong antioxidant properties.It has been widely used in food engineering,and its role in the preservation of vegetables remains to be explored.This study investigated the effect of EGCG treat-ment on post-harvest quality of broccoli florets stored at a low temperature(4℃),so as to offer a new way for post-harvest storage of broccoli florets,and provide a theoretical basis for the application of EGCG in post-harvest storage of vegetables.[Method]We conducted exogenous treatment with EGCG at a concentration of 0.2 g/L and stored broccoli florets at low temperature.Visual quality(chlorophyll)and nutritional quality(vitamin C,total phenols,antioxidant capacity,and glucosinolate)were mea-sured after 0,3,5,and 7 weeks of storage.[Result]EGCG treatment inhibited the decrease of chloro-phyll,delaying the post-harvest senescence of broccoli,and maintained higher level of vitamin C con-tent.In addition,EGCG treatment significantly sustained higher level of glucosinolates,and even pro-moted the accumulation of specific indole glucosinolates.[Conclusion]Treatment with 0.2 g/L EGCG can effectively maintain the visual and health-promoting quality of post-harvest broccoli florets stored at low temperature.
