非解乳糖链球菌RU-6发酵豆粕研究
Study on Fermented Soybean Meal by Streptococcus alactolyticus RU-6
摘要
Abstract
To analyze nutritional components,bacterial count,and anti-nutrient factor degradation in fermented soybean meal.Soybean meal was fermented using RU-6.Viable cell count,small peptides,organic acids,anti-nutritional factors,and aroma were assessed.Highest viable cell count was 6.20×108 CFU/g at 40 h,remaining high at 3.75×108 CFU/g at end.Small peptides increased by 51.29%,trypsin inhibitor decreased by 8.80%.Acetic acid,lactic acid,and propionic acid contents were 9.14 mg/g,0.48 mg/g,and 1.27 mg/g,respectively.RU-6 has potential for animal feed development.关键词
