摘要

Abstract

In order to investigate the effect of ultra-low temperature(-45℃)freezing time on the differential protein expression of small yellow croaker(Larimichthys polyactis)muscle,quantitative proteomics technology with TMT label was used.The results showed that compared with fresh yellow croaker,there were 71 and 104 different proteins in the muscle after 3 and 6 months of cryopreservation,including 13 and 40 up-regulated proteins and 58 and 64 down-regulated proteins,respectively.More protein changes were found in the comparison between 0 and 6 months compared with the difference between 0 and 3 months.In addition,a total of 15 different proteins were selected,which were significantly correlated with at least one of the quality indexes of pH value,water-holding capacity,TVBN,hardness,springiness,as well as carbonyl content,total sulfhydryl and Ca2+-ATPase activities of small yellow croaker(Larimichthys polyactis),and were expected to be indicator protein markers related to the quality of frozen small yellow croaker.
