摘要

Abstract

In this study,double-membrane plate in situ culture system was used to screen histamine-degrading bacteria from fresh and spoiled mackerel,the isolated strains were assayed for histamine degradation,and those with higher degradation ability were identified by morphological observation and molecular biology.The results showed that Z2-1 and Z2-2 strains were found in spoiled mackerel to have high histamine degradation capacity,with degradation rates of 74.50%and 72.73%,respectively.Z2-1 strain was identified as Aureimonas altamirensis and Z2-2 strain was Brevundimonas vesicularis.This article improved the screening method of histamine-degrading bacteria and provided theoretical basis for the application of histamine-degrading bacteria in controlling histamine content in aquatic products.
