Abstract

In the context of Healthy China,the domestic market pays more and more attention to the quality of snack food,and commercial sterility can be used as a effective method for verifying product quality control results.The portability,convenience and storability of casual low-acid canned food have decided it will surely into the international market,and low-acid canned products exported to developed countries are required to have test reports of commercial sterility.At present,there are many studies on commercial sterility in dairy products at home and abroad,but the vacuum-sealed low-acid flexible packaging canned food has not been systematicly studied.In this paper,the relationship between commercial sterility and canned food is introduced,and the paired and unpaired experiments of the Soleris® commercial sterility rapid detection system in the vacuum-sealed low-acid flexible packaging canned dried tofu matrix are studied.It is found that the Soleris® commercial sterility rapid detection system can shorten the detection cycle of commercial sterility in vacuum-sealed low-acid flexible packaging dried tofu to 3 days.
