摘要

Abstract

The aim of this study was to investigate the inhibitory effect of jasmine flower,pomelo leaf and orange leaf on 2-amino-1-methyl-6-phenylimidazo[4,5-b]pyridine(PhIP)generated in a chemical model system.The flavonoid ex-tracts of jasmine flower,pomelo leaf and orange leaf with different additive amounts were added into a chemical model system with phenylalanine and creatinine as precursors for the reaction,and UPLC-MS was used to monitor the changes of the contents of precursors,intermediate phenylglycolaldehyde and the product PhIP in the model reaction to explore the inhibitory effects.The results showed that the three extracts exerted significant inhibitory effects on the generation of PhIP,with 59.63%when orange leaf extract was added at 0.06 g,56.98%when grapefruit leaf extract was added at 0.06 g,and 53.13%when jasmine flower extract was added at 0.08 g.It was concluded that jasmine flower,pomelo leaf and orange leaf flavonoid extracts significantly inhibited heterocyclic amine PhIP in the following order:orange leaf ex tract>pomelo leaf extract>jasmine flower extract.
