摘要

Abstract

This study used the roots,stems,and leaves of water chestnut as materials to prepare chemical extracts of the roots,stems,and leaves of water chestnut using ethanol water extraction.The chemical composition of the ex-tracts of the roots,stems,and leaves of water chestnut was analyzed using ultra-high performance liquid chromatog-raphy-mass spectrometry(UPLC-QTOF-MS),and the antioxidant capacity of the roots,stems,and leaves of water chestnut extracts was determined using DPPH free radical and ABTS free radical scavenging ability as indicators.The research results indicate that there are 14 types of substances in the roots of water chestnut,8 types of sub-stances in the stems of water chestnut,and 31 types of substances in the leaves of water chestnut.The common com-ponents of the three are gallotannins and ellagic acid;the extracts of roots,stems,and leaves of water chestnut all have certain antioxidant capacity,and the order of antioxidant capacity is roots>leaves>stems.
