Research Progress on Resources,Catalytic Mechanisms of β-galactosidase of and Its Application
摘要
Abstract
β-galactosidase is a glycoside hydrolase enzyme that catalyze the hydrolysis of lactose.In recent years,the synthesis of galacto-oligosaccharides(GOS)by β-galactosidase transgalactosylation has become a hot research topic.However,the researches on the synthesis of high-activity β-galactosidase and the enzymatic synthesis of high-purity GOS are immature yet in China.In this review,we mainly elucidate its resources,catalytic mechanisms and its application of β-galactosidase to provide references for further studies on exploring new methods to improve β-galactosidase ability to produce galacto-oligosaccharide.关键词
