Abstract
The project aims to develop a sleep peptide composite solid drink using sleep peptide,tea theanine,and γ-aminobutyric acid as the main functional sleep-aid ingredients,supplemented with whole milk powder,grape powder,xylitol,maltodextrin,and other ingredients.Using sensory evaluation as the evaluation index,the formula of the sleep peptide composite solid drink was optimized through single-factor and orthogonal experiments,and its physicochemical properties and nutrient composition were analyzed.The results showed that the optimal formu-la of the sleep peptide composite solid drink was 0.336 g of sleep peptide,0.1 g of tea theanine,0.4 g of γ-aminobutyric acid,2.0 g of whole milk powder,4.0 g of grape powder,1.9 g of xylitol,and 0.5 g of maltodextrin.Under this formulation,the sensory score of the sleep pep-tide composite solid drink was 93.The physicochemical property test results showed that at 300,400,and 500 r/min,the average dispersion time was 15.52,7.64,5.30 s,respectively;the solubility was 92.47%,the expansion degree was 11.59%,the water content was 4.87%,the water solubility index was 88.96%,and the water absorption index was 2.30%.The nutritional composition analysis showed that the fat content was 41.969 5 g/kg,the protein content was 124.462 5 g/kg,the carbohydrate content was 0.137 5 g/kg,the ash content was 27.250 g/kg,the calcium content was 905.55 mg/kg,and the energy content was 3 671.071 5 kJ/kg.The data indicates that this product has good dispersibility and solubility,making it suitable for instant drinks.With high protein content and low fat,sugar,and energy,it can satisfy the appropriate sense of fullness before bedtime while avoiding high-sugar,high-fat,and high-calorie foods.关键词
