摘要

Abstract

Tea plants(Camellia sinensis)are important leaf-based economic crops.The fresh leaves,when processed through various techniques,produce tea products that not only develop unique flavor profiles but also retain health-promoting properties.Linalool,a key aroma-active compound in tea leaves,exists in two isomeric forms:R-(-)-linalool and S-(+)-linalool.The concentration and ratio of these isomers significantly impact the aroma quality of fresh tea leaves,dried tea,and tea infusions.Currently,there has been some research progress on the biosynthesis,oxidative degradation,and glycosidic formation and hydrolysis of linalool in tea plants.Additionally,the roles of related genes and enzymes in linalool metabolism have been preliminarily elucidated.This paper systematically reviewed the forms and accumulation patterns of linalool in tea plants,analyzing its metabolic characteristics both pre-harvest and post-harvest biotic and abiotic processes.It also examined how genes and enzymes involved in linalool metabolism respond to different processing treatments.This review aimed to provide a comprehensive understanding of the metabolic and regulatory mechanisms of linalool in tea plants,offering valuable insights for the utilization of high-aroma tea plant germplasm resources and the targeted design of specific tea flavor profiles.
