橙皮苷对白羽肉鸡生长性能、肉品质及抗氧化功能的影响
Effects of hesperidin on growth performance,meat quality and antioxidant function of white feather broilers

Abstract
[Objectives]The aim of this study was to investigate the effect of hesperidin on growth performance,slaughter performance,meat quality and antioxidant function of white feather broilers.[Methods]Ninety-six 1-day-old Arbor Acres(AA)male chicks were selected and randomly divided into 2 groups with 6 replicates of 8 birds for a 42-day feeding trial.The control group was fed a basal diet,and the hesperidin group was supplemented with 40 mg·kg-1 hesperidin in the basal diet.On the 42nd day of the experimental period,the slaughter performance was calculated,and the pectoral muscle was taken for the determination of meat quality indexes,nutrient composition,antioxidant enzyme activities and antioxidant-related gene expressions.[Results]Compared with the control group,hesperidin significantly increased the body weight at the 21 and 42 days of age,the average daily feed intake from 22 to 42 days and from 1 to 42 days,and the average daily weight gain of white feather broilers,and significantly decreased the feed-to-weight ratio(P<0.05).Hesperidin significantly increased the slaughtering rate,the rate of total clean rump,and the rate of pectoral muscle,and significantly decreased the abdominal fat rate of white feather broilers(P<0.05).Compared with the control group,the 24-hour post-slaughter pH value of pectoral muscle in the hesperidin group significantly increased,and the pectoral muscle brightness value(L∗),24-hour post-slaughter drip loss(P<0.05),cooking loss,and shear force significantly decreased(P<0.01).Hesperidin significantly reduced the pectoral muscle myofiber area and fiber diameter(P<0.05),and significantly increased the myofiber density(P<0.01).Compared with the control group,the total antioxidant capacity(T-AOC),total superoxide dismutase(T-SOD)and catalase(CAT)activities of chicken breast muscle in the hesperidin group significantly increased(P<0.05),and the content of malondialdehyde(MDA)significantly decreased(P<0.05),and the relative expression of the heme oxygenase 1 gene(HO-1)mRNA in the breast muscle tissues significantly up-regulated(P<0.05).[Conclusions]The addition of hesperidin to the diet improved the growth performance,slaughtering performance and antioxidant capacity,as well as the quality of breast muscle of broilers.关键词
