摘要

Abstract

Ascorbic acid(AsA),also known as vitamin C,is an important nutritional quality index of vegetables,and its content is jointly regulated by genetic factors and environmental conditions.The research progress on the main pathways of biosynthesis and metabolism of AsA in vegetables(L-galactose pathway,D-galactouronic acid pathway,L-gulose pathway,inositol pathway and AsA-GSH circulation pathway)and their key enzyme genes(such as GMP,GME,GGP,GalUR,GulLO,MIOX,etc.)were systematically reviewed.The regulation mechanism of environmental factors such as light(light quality,light intensity,photoperiod),temperature and hormone on AsA synthesis was analyzed,and the future research direction was prospected,which provided a theoretical basis for molecular breeding and high-quality cultivation of vegetables with high ascorbic acid content,and provided a reference for genetic improvement and industrial application of vegetable nutritional quality.
