不同产地中华绒螯蟹螯肉矿质元素含量比较及产地判别研究
A study of mineral element contents and origin discrimination based on chela meats of Eriocheir sinensis from different regions

Abstract
To understand the mineral element content characteristics of edible parts of Eriocheir sinensis(Chinese mitten crab)from different origins within the same water system,and further assess the nutritional quality and evaluate the feasibility of discriminating the producing regions of crab with mineral elements,E.sinensis from seven areas of the middle and lower reaches of the Yangtze River,such as Datong Lake in Hunan province,Huangpi Lake,Tuo Lake,Nüshan Lake,and Wuwei Section of the Yangtze River in Anhui province(wild),as well as Qin Lake and Shijiu Lake in Jiangsu province were selected as samples.The contents of 21 kinds of mineral elements in the chela meats from the same unilateral chela were analyzed by an inductively coupled plasma-mass spectrometer(ICP-MS)after pre-treatments of cleaning,drying,grinding,digestion,and constant volume.Results showed that the chela meats were rich in essen-tial elements of Na,Ca,K,Mg,and the other 17 kinds of mineral elements were present in relatively smaller quanti-ties.The stepwise discriminant analysis showed that the mineral element composition in E.sinensis from seven origins revealed certain differences,and the accuracy rate of origin discrimination was 93.9％,which has the feasibility of ori-gin discrimination of the crabs with mineral composition.关键词
