水产预制菜生产中食品安全的高频风险与防控
High frequency risks and prevention of food safety in aquatic prepared dishes production
摘要
Abstract
In order to further accelerate the high-quality development of the prepared dishes industry and ensure food safety in the production process of aquatic prepared dishes,this study summarized and analyzed the food safety risk issues found during on-site inspections of aquatic prepared dishes production permits in Xiamen from 2020 to 2023,and sorted out the frequent food safety risk issues and their distribution types in the production process of aquatic prepared dishes by production enterprises.The results showed that high-frequency food safety risks were mainly concentrated in equipment and facilities,management systems,production sites,and other aspects;Furthermore,it pointed out the relationship between high-frequency food safety risk issues and verification content,as well as the potential harm to human health that may arise;In response to the high-frequency food safety risks in the production process of aquatic prepared dishes production enterprises,countermeasures and suggestions were proposed,including strict implementation of main responsibility and management system,strengthening hardware equipment configuration and management,accelerating the construction of standard system by administrative departments,and further innovating smart supervision.关键词
