Nutritional components analysis and quality evaluation of Silurus meridionalis

Abstract
This study aimed to analyze the nutritional quality of Silurus meridionalis muscle to provide references for the utilization of germplasm resources and the development of healthy efficient aquaculture.Specimens from three regions-Gangbei District(GB group),Fumian District(FM group),and Hengzhou City(HZ group)in Guangxi were analyzed for muscle nutritional,amino acid and fatty acid components.The results showed that the crude protein content in the muscle of all three groups was high(18.82%~20.90%),while crude fat content was low(0.48%~2.63%).The GB group exhibited significantly higher crude fat and total sugar concentrations compared to the other groups(P<0.05),and its crude protein content was significantly higher than that of the HZ group(P<0.05).The FM group showed significantly higher concentrations of iron,manganese,zinc,and selenium in muscle compared to the GB group(P<0.05).Among the 17 amino acids detected,glutamic acid(Glu)was the most abundant,followed by aspartic acid(Asp)and lysine(Lys),with cystine(Cys)being the least abundant.The GB group displayed significantly higher total amino acids(TAA),total essential amino acids(EAA),total semi-essential amino acids(HEAA),total non-essential amino acids(NEAA),and total delicious amino acids(DAA)than the other groups(P<0.05).A total of 15~21 fatty acids were identified across the groups,with the HZ group showing the highest saturated fatty acid(SFA)and polyunsaturated fatty acid(PUFA)concentrations,while the FM group had the highest monounsaturated fatty acid(MUFA)content.The study indicates that Silurus meridionalis muscle from all three regions is rich in nutrients,characterized by high protein and low fat,making it a valuable food source.Notably,the GB group demonstrated a more balanced composition and ratio of amino acids and fatty acids compared to the other groups.关键词
