摘要

Abstract

To investigate the differences in antioxidant activities and metabolite characteristics between per-simmon leaf black tea and green tea,the total polyphenol,flavonoid contents,and antioxidant activities were determined by UV-visible spectrophotometry,and the metabolites were screened and identified in combination with ultra-high liquid chromatography-tandem mass spectrometry(UPLC-MS).The results showed that the total polyphenol,flavonoid contents,and the antioxidant activities of DPPH and ABTS radicals of persimmon leaf black tea were significantly higher than those of persimmon leaf green tea;a total of 199 differential metabolites were identified by UPLC-MS,with 7 categories,namely flavonoids,alkaloids,organic acids and their derivatives,nucleotides and their derivatives,and amino acids and their de-rivatives,lipids and phenolic acid,accounting for 22.61%,9.55%,8.04%,8.04%,7.04%,7.04%and 6.53%,respectively,of which the differences in the composition and content of flavonoids,alkaloids and phenolic acids may be an important reason for the differences of persimmon leaf black tea and persimmon leaf green tea.
