超声辅助制备椰子油微胶囊及其贮藏稳定性研究
Study on ultrasound-assisted preparation of coconut oil microcapsules and its storage stability

Abstract
To expand the application fields of coconut oil,this study used chitosan(CTS)and soy protein isolate(SPI)as wall materials,with coconut oil as the core material,combining ultrasonic-assisted homogenization and spray drying technology to prepare coconut oil micro-capsules.The study examined the particle size and distribution,encapsulation efficiency,ther-mal stability of the microcapsules,and the retention rate of the core material under different storage conditions.Additionally,it analyzed the release behavior and changes of the microcap-sule core material compared to unencapsulated core material in a simulated human gastroin-testinal environment.The results showed that the average particle size of the prepared coco-nut oil microcapsules was 15.8 μm,with 83%of the microcapsules falling within the 10~25 µm range,and they exhibited good thermal stability.In a storage environment at 4 ℃,rel-ative humidity of 32%,and light intensity of 0 lx,the microcapsules showed good stability.In the simulated gastrointestinal environment,after 270 minutes of treatment,the particle size of the microcapsules decreased from 15.55 μm to 2.01 μm,with a release rate of 85.55%.This study provides a foundation for improving the quality and efficiency of coconut by-products.关键词
