摘要

Abstract

The leaves of Apocynum venetum L.was fermented with Aspergillus niger.The fermented samples were subjected to freeze-drying treatment,and the contents of amino acids,proteins,and reduc-ing sugars were determined.The changes in major phenolic substances contents and their antioxidant ac-tivity were analyzed.The results showed that there were no significant changes in the contents of amino acids and proteins during the first 6 d of fermentation.However,the content of crude protein content in-creased while amino acid content decreased at the 12th day.Reducing sugar consistently decreased throughout the fermentation process.After 6 days of fermentation,the total amount of major phenolic sub-stances significantly increased(p<0.05),showing an 8.58%increase compared with the non-fermented state.The contents of chlorogenic acid,rutin,and astragalin showed a trend of first increasing and then decreasing during fermentation,whereas caffeine acid and quercetin continued to increase.The DPPH and ABTS+radical scavenging rate of the fermented samples was 18.90%and 14.78%higher than that of the unfermented samples,respectively after 6 d fermentation.Overall,6 d fermentation had no significant effect on the total protein and amino acid content of A.venetum but significantly enhanced the total con-tent of major phenolic substances and antioxidant capacity.
